Pumpkin Chip Drops
- 1 cup butter, softened
- 1 cup sugar
- 1 cup packed brown sugar
- 1 egg
- 1 tsp vanilla extract
- 2 cups all purpose flour
- 1 cup quick cooking oats
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp salt
- 1 cup cooked or canned pumpkin
- 1 cup (6 oz) semisweet chocolate chips
Cream the butter and sugars. Beat in egg and vanilla. In another bowl combine flour, oats, baking soda, cinnamon, and salt; add to the creamed mixture alternately with the pumpkin. Stir in the chocolate chips.
Drop by tablespoonfuls 2 inches apart onto greased baking sheet. Bake at 350 for 9-12 minutes or until golden brown. Cool on wire racks.
