Kansas City Parent Staff Share Their Favorite Summer Ice Cream Deserts!

Among our staff of seven full and part time employees, the folks that bring you KC Parent are parents to 17 children so we know the value of an easy summer recipe as well as anyone! Here are a few of our summer favorites: 

OREO Ice Cream Pie
 Ingredients:

1 graham cracker crust (extra large size)

1 package Double Stuffed OREO Cookies (quartered) - reserve 8 whole cookies to decorate top of pie

1/2 gallon of vanilla ice cream (softened)

16 oz Cool Whip

In a bowl, mix together softened vanilla ice cream with 8 oz cool whip and quartered Double Stuffed OREOs. Spoon this mixture into prepared extra large pie crust. Spoon remaining 8 oz of Cool Whip on top of pie and make swirls with your knife. Cut remaining OREOs in half and use them to decorate the top of the pie placing the halves around the top of pie in one large circle. Freeze for at least eight hours.

Layered Ice Cream Sandwich Dessert 

Ingredients:

20 Ice cream sandwiches 

Nuts or candy bar pieces

1 jar of caramel or hot fudge sauce

16 oz Cool Whip

Put one layer of ice cream sandwiches in the bottom of a 9 x 13 pan. Pour half of the jar of caramel or hot fudge sauce over the ice cream sandwiches (don't heat the sauce). Sprinkle the nuts or candy pieces over the sauce. Spread 1/2 of the Cool Whip on top of the sauce/nut layer. Repeat the above instructions to make a 2nd layer. Freeze and cut into squares to serve.

 

Ice Cream Waffle Sandwiches

What you need:

L'eggo Waffles

Ice Cream

Sprinkles

Toast up two of your favorite L'eggo waffles. Spread ice cream on one half and cover with the other. Roll the sides in the sprinkles. Enjoy!

They're so easy the kids can do it themselves!
