Yellow Fall Recipe- Spaghetti Squash Marinara
Ingredients
- 1 spaghetti squash
- 1 15-oz. can chunky tomato sauce
- 1 T. olive oil
- 1/4 onion, diced
- 1 carrot, peeled and shredded
- 1 garlic clove, minced
- 1 T. fresh basil, chopped
Directions
- Preheat oven to 400 degrees.
- Cut the squash in half and remove the seeds.
- Place the squash on a lightly greased baking sheet and cook for 45-50 minutes or until softened.
- Heat the oil in a saucepan over low to medium heat and sauté the onion, garlic and carrot for 2-3 minutes.
- Add the tomatoes and cook for 4-5 minutes. Add the basil.
- Remove the squash from the oven and let squash cool for several minutes.
- Shred the squash with a fork until stringy.
- Place the spaghetti squash in a bowl and top with the marinara sauce.

Orange Fall Recipe – Carrot Fries
Ingredients
- 1 lb. carrots
- Cooking spray
- Salt and pepper to taste
Directions
1. Preheat oven to 400 degrees.
2. Peel the carrots and cut them into strips about a quarter-inch thick and a few inches long.
3. Coat a baking pan with cooking spray and spread the carrots onto it. Sprinkle with salt and pepper.
4. Bake 15 minutes. Flip them over and coat them with a bit more cooking spray, salt and pepper; bake another 15 minutes until lightly browned.
