Every once in a blue moon, Price Chopper does something extraordinary, something that sends me to the store several times in one week, something that makes me feel like I got the Golden Ticket at Willy Wonka’s Chocolate Factory….Price Chopper has a sale on boneless skinless chicken breasts!
Now, while this event has me steering my cart down the aisle with fervor, my husband, on the other hand, cringes when he sees bags and bags of chicken in the freezer. “Can’t we just have some steak?” he replies. “Sure, if steak ever goes on sale and doesn’t cost 3x the price of chicken, then absolutely we can have steak!” I respond.
The lowest I’ve seen the price for a pack of 4 or 5 boneless skinless chicken breasts is $1.57/lb – that’s incredible!! As I stood in front of the chicken grinning from ear to ear at the amazing deal I was getting on meals for the next month, another woman joined me. Competition possibly, on who might be getting the “better” packaged chicken.
Not true. She was getting her fair share of this great deal for her family of 3, and we joked about how our husbands dread the chicken sale….but we LOVE it!
So, in honor of the great amounts of chicken in my freezer, here is a simple chicken recipe that my husband enjoys. I’d love for you to share some of yours as well!
Salsa Chicken
Bnls Sknls Chx Breasts
1 Packet of taco seasoning
1 cup shredded cheese
Salsa – any kind, you pick your fav
Preheat oven to 375 degrees. Cover chicken with taco seasoning (depending on the number of chx breasts for your family, you may need 2 packets). Spray a Pyrex pan (you pick the size based on the number of chicken breasts) with Pam and lay chicken covered in taco seasoning in pan. Pour salsa over chicken.
Cover with foil and bake for 20 minutes. Pull pan out and sprinkle shredded cheese on top of chicken. Return to oven uncovered for 5 minutes, or until cheese is melted.
Serve rice and beans on the side, or anything else your heart desires! Delicious and easy!!
