Once November arrives, life gets pretty hectic. So in the interest of saving time, I've recently found two new recipes that are quick, easy and yummy. I thought I'd pass them along and if you happen to have any great recipes that are super speedy, I'd love to have them.
Pulled Pork Sandwiches
4-6 lb pork roast, visible fat trimmed (for our family of 4 I used a 2.5 lb roast and we had plenty for dinner and lots of left overs as well)
24 oz jar unsweetened applesauce
18-24 oz bottle barbecue sauce of your choice
Place meat in slow cooker. Spread applesauce over top. Spoon barbecue sauce over top of applesauce (be careful not to disturb the applesauce). Cover and cook on low for 10-12 hours. For my smaller roast, 6 hours was the perfect amount of time. Remove roast and pull apart with a fork. Put meat in serving dish, add some of cooking broth so meat is juicy but not swimming in sauce. I served it on hamburger buns with oven baked french fries and fresh veggies. The meat was so good and SO EASY!
Pumpkin Bars
29 ounces canned pumpkin
12 ounces evaporated milk
3 eggs
1 cup sugar
1 t salt
3 t cinnamon
1 box yellow cake mix
1 cup pecans
3/4 cup melted butter
Mix the first 6 ingredients together. Pour into a greased 9 x 12 pan. Sprinkle dry cake mix on top. Sprinkle pecans on top of cake mix. Pour melted butter on top. Bake at 50-60 minutes at 350. Tip: Make the day before-they taste way better after cooling for a entire day. So rich but so good!!
