It isn’t very often that a recipe from Pinterest has me hop up from the computer and spring into action. In fact, my kitchen hasn’t seen much action at all this summer. Between late evenings at the pool, dinners out with friends and family and out of town trips, I think my oven is growing cobwebs. And don’t even mention the heat. Just ironing or blow drying my hair is enough to me stop and stick my head in the freezer (Really. I do that. I am not the only one, am I?) let alone preparing an entire meal.
So, when I saw this recipe I knew I had to try it – so tricky, and tasty, and cold!
Waffle Iron Ice Cream Sandwiches
First, pull out one of those boxes of cake mixes you are not baking this summer for fear tof even looking at that hot oven. Mix it up...go ahead...we’re going to make waffles out of them! Super quick and easy. These bake up as quick as waffles...mine took about 60 seconds each!
Then put all of the waffles on a cookie sheet with wax paper between the layers and stick them in the freezer for a little while. They’ll cool off and firm up a bit. Also, take out your ice cream and let it soften so it is spreadable. Then top your waffles with ice cream and add a waffle top. Put them back in the freezer until you’re ready to serve.
What a super yummy summer treat!
