Pumpkin Dip
As I’ve mentioned, I love pumpkin and am always on the lookout for new recipes with my fave ingredient. Below is a new one I tried this year. Perfect for an after school snack or a treat to enjoy on a cool fall evening.
Ingredients:
- One can of pumpkin
- 16 oz. container of Cool Whip
- 3 small boxes of instant vanilla pudding (just the mix, don’t make the pudding)
- Pumpkin Pie Spice (add as much as you like depending on your taste)
Directions:
Mix all ingredients together, refrigerate and serve.
How easy is that? Easy-peasy, lemon squeezy. The recipe says to serve with graham crackers. I did and those were good, but what I really liked was the dip on vanilla wafers. It also is super yummy on apples (and since apples are in season, perfect time to head out to a local orchard, pick apples and then come home and enjoy them with this dip).
